Broccoli Cheese Soup
This is an easy weeknight dinner. I came up for it because I wanted a lighter version of the classic comfort soup.
Broccoli Cheese Soup
Yield: 6 Servings
Ingredients:
- 1 can cream of healthy request cream of chicken soup
- 2 cups low-sodium chicken stock
- 2 tablespoons cornstarch
- 1 tablespoon Montreal steak seasoning
- 1 teaspoon fresh ground black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 2 tablespoons canola oil
- 1 small onion, finely diced
- 1 cup grated carrots
- 1 large bunch broccoli, cut into bite size pieces
- 1/2 cup reduced fat shredded cheddar cheese
- 6 tablespoons light sour cream
- combine first 7 ingredients in crock pot on low setting
- heat oil over medium-high heat in medium size skillet. Sauté onion, carrots and broccoli until onions are translucent, about 5 minutes
- add veggies to crockpot, stir and cover. Cook for 3-4 hours
- just before serving, stir cheese into crockpot mixture until melted. After dishing into bowls, mix in 1 tablespoon of sour cream per bowl
